Culinary themed festival centered around Bautz'ner mustard — from August 4th to 30th, 2026, in 12 city restaurants under the motto 'This is how homeland tastes'
Bautz'ner mustard is one of the few products from the GDR era that has retained its brand name after reunification and even successfully defended it nationwide. The medium-hot mustard has been produced in Bautzen, an East Saxon city on the edge of Upper Lusatia, since 1866. The distinctive green glass bottle has become a symbol of Saxon identity across generations — it still stands next to bread and sausage on the breakfast tables of many East German households today. With the Bautz'ner Senfwochen, the city of Bautzen celebrates this famous product every August.
The 21st edition of the Senfwochen will take place from August 4th to 30th, 2026. 12 Bautzen restaurants, cafés, and retailers will develop special mustard dishes and drinks, served only during these four weeks. The motto for 2026 is 'This is how homeland tastes' — emphasizing the regional connection of mustard culture with Upper Lusatia and its Sorbian heritage.
The participating establishments use the Senfwochen to unleash their creativity. There are hearty classics like spicy roast hare with a mustard crust or flavorful mustard steaks; Sorbian specialties with mustard like Wjelbik creations, using traditional Upper Lusatian ingredients; unusual combinations like mustard cocktails, mustard ice cream, or mustard pralines; and spreads, sausages, and fish dishes with mustard marinades. Most dishes are only available during these four weeks and are served at fair prices.
Among the almost annual participants are: Bautzener Senfstube (the original house with its own mustard manufactory and show room), Sorbisches Restaurant Wjelbik (with traditional Sorbian cuisine), Mönchshof (upscale restaurant), Spreeblick (bistro with more modern cuisine), Zum Karasek (inn with Upper Lusatian classics). Additionally, there are cafés with mustard desserts and individual food retailers with special mustard assortments.
Bautzen is the unofficial capital of Upper Lusatia and simultaneously the cultural capital of the Sorbs — a small West Slavic minority that has lived in the region for over 1,000 years. This Sorbian identity shapes the city's culinary landscape: wedding soup, Sorbian stews, crumble cake, gingerbread — and of course, the creative use of mustard. With around 40,000 inhabitants, Bautzen is a medium-sized city, but its historic center with its many towers and medieval city walls makes it one of Saxony's most beautiful destinations.
For four weeks, Bautzen's gastronomic scene transforms into a culinary mustard laboratory. 12 restaurants, cafés, and retailers develop special dishes and drinks centered around the famous Bautz'ner mustard — from hearty traditional to refreshingly modern.
The 2026 motto 'This is how homeland tastes' highlights regional connection: Sorbian mustard creations, classic Upper Lusatian dishes with creative mustard accents, local ingredients, and regional breweries. The dishes are only available during these four weeks.
