When the Karlsplatz in Stuttgart-Mitte is filled with the typical aroma of smoked fish, eel soup, and Bismarck herring on the first weekend of July, the Hamburger Fischmarkt is back. For the 37th time in a row, WAGS Hamburg Events GmbH brings its North German market concept to the Swabian capital — Stuttgart is considered the "birthplace" of the travelling fish market tour; the format has been running here for over 30 years. From July 2nd to 12th, 2026, you have eleven days to experience Hamburg's market culture in an atmosphere that fluctuates between a harbour bar and a folk festival vibe.
The most distinctive element of the Hamburger Fischmarkt are the market criers. In the best Hamburg tradition, stall owners hawk their wares in a mix of Low German, High German, and creative wordplay, bundling eels, fish rolls, cheese wheels, and fruit crates into absurdly cheap bulk offers and throwing them over the counter — for cash, for payment, but above all for the laughter, whistles, and applause of the onlookers. It's a theatrical sales ritual that meets with the same enthusiasm in Stuttgart as it does at six in the morning at Hamburg's Fischmarkt Altona.
At the fish stalls, you'll find the full North German repertoire: smoked eel, Bismarck herring, Matjes (herring) prepared in the "Hausfrauenart" (housewife style) and with onions, fish rolls with crab, salmon, fried fish, or Bismarck herring, Pannfisch (fried fish with potatoes and mustard sauce) as a warm snack, eel soup as a traditional Hamburg meal, plus smoked specialities like smoked sturgeon, trout, and smoked salmon. Other stalls offer cheese, Schmalz (lard spread), sausage, and poultry products.
A stage in the centre of Karlsplatz offers daily live music with a North German flair — sea shanties (Hamburg sailors' songs), traditional Hamburg folk songs, upbeat pop, and cover bands with Hamburg repertoire. Well-known classics like "An der Nordseeküste" and "Hamburger Veermaster" are included. To accompany the sing-along atmosphere, there's beer (often Astra or Holsten, Hamburg brands) and Köm (caraway schnapps).
Karlsplatz is located in the heart of Stuttgart-Mitte — between Schlossplatz and Charlottenplatz, in close proximity to the Neues Schloss (New Palace) and the State Opera.
