Regionally known culinary village festival centered around the Alsatian-Palatinate specialty, Flammkuchen
The Flammkuchenfest Knittelsheim is a classic example of Palatinate village festival culture, continuing the tradition of Alsatian-Palatinate Flammkuchen culture. Flammkuchen (called tarte flambée in Alsace) is a traditional specialty originally prepared by farmers in the residual heat of a bread oven. In Knittelsheim, Flammkuchen is freshly prepared at a stone oven, guaranteeing authentic crust texture and characteristic smoky flavor.
The municipality of Knittelsheim organizes the festival together with local clubs—the sports club, fire department, and women's association. A stone oven is set up on the village square, where helpers bake Flammkuchen fresh all day. Orders are placed at the counter, served on wooden boards, and eaten at long beer tables under the open sky.
Classically, Flammkuchen is topped with crème fraîche, bacon, and onions. Modern variations are also offered: with cheese, with mushrooms, vegetarian with sour cream and herbs, and a sweet version with apple and cinnamon for dessert. Prices are moderate, with proceeds supporting club activities.
Palatinate wines from regional vintners (Riesling, Grauburgunder, Dornfelder), Palatinate draft beer, and Palatinate Schorle (wine mixed with mineral water) are served. A small stage provides musical accompaniment, often featuring cover bands or acoustic sets.
