Grand district festival with culinary specialties in the historic center of Eldagsen
When the Honigkuchen-Senf-Fest begins on the last weekend of May, Eldagsen becomes a meeting point for people from the entire southern Hannover area for two days. The historic town center, with its half-timbered houses, the church square, and the market street, transforms into a grand festival mile. An estimated 10,000 visitors attend—a remarkable number for a district of Springe with just under 3,500 inhabitants. The event is organized by the Eldagsen business association, a group of local traders who have been organizing the festival for many years.
Honey cake and mustard—the two namesake products represent Eldagsen's history of craftsmanship and culinary traditions. Honey cake was traditionally baked as festive pastry in the region. Eldagsen mustard has its own local tradition, which is still maintained today by local producers. The festival embraces this identity, showcasing specialties at stalls and also providing a platform for other regional producers, craftspeople, and associations.
The business association focuses on a broad program that appeals to all age groups. Live bands, dance groups, and choirs perform on one or more stages. The market street fills with stalls—selling arts and crafts, regional products, clothing, and gifts. A fairground area with a children's carousel and smaller attractions provides a folk festival atmosphere. The culinary offerings range from bratwurst and fries to regional specialties and coffee and cake—and of course, honey cake and mustard in numerous variations.
As a former town with its own history, Eldagsen offers a special atmosphere. The half-timbered buildings, the historic church square, and the manageable street layout create a backdrop that a big city festival cannot match. Visitors to the Honigkuchen-Senf-Fest experience not only a well-organized folk festival but also a vibrant piece of Lower Saxony's district culture.
On Saturday, May 30, and Sunday, May 31, 2026, the Eldagsen business association invites you to the grand district festival in the historic town center. Honey cake and mustard are at the heart of the culinary presentation, complemented by numerous other regional specialties and a versatile stage program.

Eldagsen is a district of the town of Springe. By car via the B217 and L460. By public transport: S-Bahn S5 to Völksen/Eldagsen station, then bus or approximately a 25-minute walk.
During the festival, parking areas will be designated on the outskirts of the town. Access to the town center itself will be restricted due to the festival mile.
Admission is free.
Numerous stalls offer regional specialties, bratwurst, fries, coffee and cake, as well as honey cake and mustard in many variations.
